After a two year hiatus, Michelin-star chef Philippe Rispoli is once again transporting guests to France with every bite.
While the aroma of fresh croissants never left Wellfleet’s Lecount Hollow Road, Cape Cod surely longed for PB Boulangerie Bistro’s (pbboulangeriebistro.com) restaurant during the pandemic. This month, just in time for summer, chef Rispoli has reopened the beloved French eatery, ready to curb the appetites of locals and travelers alike. With a little help from chef Christian Etchebest of La Cantine du Troquet in Paris—the bistro’s summer chef in residence—this duo is whipping up all the favorites, and a few new items. “Our entire team has been waiting for this moment since we had to close our dining room doors during the pandemic,” Rispoli explains. “We used the time to explore new dishes, revamp the bistro and plan for an exciting and busy summer with a very special guest joining me in the kitchen.” With weekly switch-ups in the prix-fixe menu, customers will be taken on a tour all throughout France through their taste buds—there’s no knowing what new plates the menu will feature. Plus, visitors can always stop by the boulangerie for an array of grab n’ go sandwiches and buttery pastries when their cravings kick in.
