West Dover, Vt.’s most beloved inn is ready to welcome back winter travelers, following an exquisite renovation inspired by Ireland’s Adare Manor castle.
Sparkling lights ensure the snow glistens all winter long.
Nestled in the picturesque Deerfield Valley awaits the historic Hermitage Inn (thehermitageinnvermont.com), blanketed in sparkling snow. Step inside the 19th century property to be enveloped with warmth from the staff and new proprietors, Tim Hall and Mary Lou Ricci. The couple revived the retreat in December 2021 after a three-year vacancy, hoping to create a luxury destination with modern details, farm-to-table dining and an award-winning wine program. Needless to say, they’ve succeeded, recently securing a 2022 Wine Spectator Award of Excellence (one of many in the getaway’s history). “It’s a really magical place,” says Ricci. “It brings us so much joy to see people come to our property and then leave really happy.” With the winter season in full swing, The Hermitage Inn’s private cottages and lavish rooms are bustling with snowmobilers, ice skaters (yes, they have their own rink), oenophiles and skiers—Mount Snow is just a five-minute drive away.

After a long day on the slopes, or snuggled up by your room’s fireplace, the après-ski lifestyle kicks in. Melt into a restorative massage before choosing between two delectable eateries, both under the direction of James Beard Award-winning chef Michael Schlow. The historic Tavern provides a more laid-back, cozy dining experience with walnut tables, low ceilings, deep grays and woodland views. “When you walk in, it feels like a hug,” shares Ricci. Their formal dining option, The Birches, serves more sophisticated American fare, also with seasonal, local ingredients, but tasting menu style. Towering, 10-foot black ceilings, banquettes and a roaring fireplace complement the relaxed yet elegant atmosphere. “We wanted it to feel like you could close your eyes and be in a really fine restaurant in Boston, New York City or Miami,” she says.
Luxury gondolas are elevated with red leather seating and walnut tables
Beyond the two restaurants, Hall and Ricci tempt visitors with private tastings in their cellar, a monthly wine tasting dinner and, more recently, the Alpine Wine & Food experience. Two customized gondolas, outfitted with chandeliers, red leather and walnut tables, offer a sumptuous, post-slopes destination that serves alpine favorites like fondue, Champagne and caviar.

Whether you choose to fully succumb to the Hermitage lifestyle or explore the valley, the inn’s no-fuss, elevated ambiance is sure to welcome you back with a glass of their finest wine and memorable moments for years to come. “We’d like to say it’s ‘mountain elegance,’” notes Ricci. “You can wear your jeans and flannels and fit right in, but you know that the service is going to be impeccable, and the food’s going to be great. And if you’re a lover of wine, you are going to be in heaven.”
